DragonS Beard Candy

Thank you for the education, it's always nice to learn something new from someone. I did not know that's what it's called in Korea and I think I hurt my tongue trying to say the name :D I have only ever known the Chinese style of making it because I am from Malaysia and the Chinese make up a major part of the population.

I was aware that there was a Korean version of the recipe but didn't know it used honey and malt for the base. That sounds tasty and will experiment with that next time I make Dragon's Beard again.

Admittedly my the recipe I am using is very sugary. I have seen videos on how to do it but lack the experience to do it as smoothly and precisely as they do in the videos you shared.

But that would obviously change as one keeps making the candy, I did mention that me and my sister are amateurs at making it. Thanks for leaving a comment :.

It is brewed with artisan spirit to make 16, strand suggesting the prayer for longevity, health, god fortune and wish-fulfillment.

It is not much sweet, not sticky to teeth, but enjoyable with various tastes according to garnishings. It can taste better with teas as it is cold and frozen.

Question 4 weeks ago on Introduction. I tried making this today. The pucks are really hard, so I had to microwave them to soften them a little.

What did I do wrong? Cooked to long? Not long enough. The candy tastes good enough, but it really sticks to ones teeth.

My wife lost a cap while eating it. Tip 1 year ago. I tried to work with it as soon as it was taken off the stove, and I learned that you won't get burned if you use enough cornstarch on it.

It was easier to work with, and at the hour of cooling mark, it was too hard to work with. My family loves it.

Question 2 years ago. Question 2 years ago on Step 3. Hi, I would like to ask the candy in the silicon need to cool down for how long?

The candy I made it harden too fast as I fan at the candy. When you start forming the candy beard is it still warm or cool complete?

Thanks, Mei. Reply 3 years ago. It might help to use more corn syrup, as that makes candy more soft in my experience.

I'm not sure if it will work, but it's probably worth a try. Hope that helps! Thank you so much for the detailed post and your experience. I grew up with candy when we went to Chinatown in , NY and was telling my chid about it.

I made one attempt and it turned out fantastic, but the next day when I was going to get my second puck I had an ant infestation which made me throw out the pucks which I had sealed in containers.

I will reattempt the candy again. Do you know if you store the pucks in the refrigerator will it change the consistence and cause crystallized pucks?

Thanks again Rose. Reply 4 years ago. So happy to hear that you had great results on your one attempt : I had no trouble with putting them in the refrigerator, when I wanted to make more I either left them on the kitchen table until they were to room temperature or put them in the microwave for a few seconds at a time until it was pliable again.

Thanks so much the next time I make it I'll refrigerate the pucks. Where did you get the silicone moles? I got lucky and found it in the kitchen section of a local hardware shop.

Though nowadays I go looking online for silicone mold, primarily eBay. HELLO THERE!! I am looking for recipe for ginger chew can anybody help me?

I want them taste like chimes or gin gin. Loved the tip on using those silicone molds, definitely made it easier. I don't want to make them all and then have them go to waste.

If not I know some office people and friends are going to get spoiled! Reply 7 years ago on Introduction.

Hi : Never occurred to me to freeze them before, the "hairs" are just sugar which preserves itself. The rice or corn flour and the chosen filling would be an issue I have seen them last about a week in an airtight container in a cool, dry place.

Unfortunately your guess is as good as mine I suppose try freeze a small amount in maybe a ziplock bag with the air sucked out as much as possible to lessen the chance of frost and when you want to eat them just let them get back up to room temperature on their own.

I have also had it at the Dragon's Beard Candy stand in Montreal's Chinatown. Dragon's Beard Candy dates back to the Han Dynasty in China.

Legend has it that an Imperial Court chef entertained the Emperor by showcasing the process of making the candy. This involved stretching a dough made of rice flour and sugar into small, thin strands.

These strands resembled a dragon's beard and were sticky enough to literally stick to your face easily. Hence, the candy was named Dragon's Beard Candy.

Another story behind its name is that the candy was reserved for the ruling class. As the symbol of the Emperor is the dragon, the candy bears "dragon" in its name.

Dragon's Beard Candy has been known as a Chinese version of cotton candy but with a filling. The white, thin strands are made of white sugar, maltose or corn syrup, and rice flour.

The filling is typically made of peanuts, shredded coconut, and white sesame seeds. The process starts off with boiling sugar and the corn or maltose syrup.

Dragon's beard candy or Chinese cotton candy is a handmade traditional art of China. It is also a traditional Chinese sweet similar to floss halva or cotton candy , which can be found in many Chinese communities.

Dragon's Beard Candy was initially created in China, but soon spread in popularity and became a regional delicacy in other parts of East Asia , as well as and more recently Canada , Turkey, Singapore , the United States and Korea.

It is highly sensitive to moisture [3] and tends to melt when exposed to higher temperatures, notably during warm weather.

The legend of Dragon's Beard Candy was first practiced during the Chinese Han Dynasty. The process of making the candy involved stretching a dough-like mixture composed from rice flour into small, thin strands.

These strands reminded the Emperor of a dragon's beard, and were sticky enough to adhere to one's face quite easily, so thus the concoction was there-forth named as Dragon's Beard Candy.

The name may also be attributed to the status of the mythical dragon as a symbol of the Chinese Emperor, [5] so presenting the confection as Dragon's Beard Candy was deemed acceptable due to the social nature of the candy.

It was reserved only for the ruling class likely due to the complexity of the preparation process. Dragon's Beard Candy provided a source of conflict several centuries later, however, as during the Chinese Cultural Revolution the Red Guard , acting in accordance to the orders of the Communist Party of China , forbade the Chinese populace to hold activities that could be attributed to the Han Dynasty.

Nevertheless, in recent years, the art has resurfaced in tourist destinations such as street festivals, and has even spread to farther reaches of the globe through dedicated masters of the task.

Traditionally, Dragon's Beard Candy is made from sugar and maltose syrup, although recipes based on corn syrup are now used in the United States. Due to the presence of large amounts of syrup, the candy has a very high sugar content.

For preparation of Dragon's Beard Candy, the preparer must initially [7] boil and melt the saturated maltose solution which may include sugar or corn syrup for 5 minutes until thickened, followed by leaving the mixture to chill for 10 minutes until a solid state is reached.

This resulting solid, which is somewhat flexible or elastic, is then formed into a torus.
